This is a kugel-like potato dish that Mary used to bring to all the covered-dish functions. The kids would ask for someone to please make "Mary potatoes" and so it has been named. Don't know if it ever had another name.

Preheat oven to 400 degrees Farenheit. Grease an 8x8 inch baking dish. Mix all ingredients together with a little salt & pepper and pour into the prepared dish. Bake until browned on top -- about an hour.
Variations
- Replace the parmesan cheese with one 8-ounce package of shredded cheddar or cheddar mix.
- Add garlic, or herbs of your choice to the potato mix
- Double and bake in a 9x13 "brownie" pan
- Bake along with meat at any temperature from 325 to 450; adjust cooking time accordingly
