Mary potatoes

This is a kugel-like potato dish that Mary used to bring to all the covered-dish functions. The kids would ask for someone to please make "Mary potatoes" and so it has been named. Don't know if it ever had another name.

Ingredients

  • 1 package shredded potatoes (Simply Potatoes brand)
  • 2 cups heavy whipping cream
  • 1 stick butter
  • 1 cup parmesan cheese
  • 1 onion, finely chopped
  • Directions

    Preheat oven to 400 degrees Farenheit. Grease an 8x8 inch baking dish. Mix all ingredients together with a little salt & pepper and pour into the prepared dish. Bake until browned on top -- about an hour.

    Variations

    1. Replace the parmesan cheese with one 8-ounce package of shredded cheddar or cheddar mix.
    2. Add garlic, or herbs of your choice to the potato mix
    3. Double and bake in a 9x13 "brownie" pan
    4. Bake along with meat at any temperature from 325 to 450; adjust cooking time accordingly
