Menu Plan Monday - October 1-5, 2012

I'm at home all week instead of traveling, so I'm planning to cook at home and try to restrict the restaurant visits to breakfasts or lunches.

The biggest impediment to eating at home these days is simply that I'm not prepared. I just hate to get to supper time and not have anything available (or readily at hand) and being too hungry to wait to dig something out of the freezer and fix it. So, I'm going to plan things out in advance. I reserve the right to change my mind at any point in time. But if nothing else springs to mind, I have a plan. I have a pretty large stockpile in my deep-freeze, so there's plenty to draw from.

Monday: 1 October
-- Caldo Gallego, corn muffins, carrot sticks, apple slices

Tuesday: 2 October
-- grilled chicken breasts, homemade guacamole

Wednesday: 3 October
-- taco soup, quesadillas

Thursday: 4 October
-- spaghetti, garlic toast, green beans

Friday: 5 October
-- pulled pork, whole wheat buns, cole slaw
